Italian Meatballs in Tomato Sauce

(for 3 persons)

 
 

Ingredients for meatballs

8 oz (250g) best minced beef (or mixed beef and pork)

½ teaspoon ground cinnamon

2 garlic cloves – pressed

3 level tablespoons grated parmesan cheese

1 medium egg

salt & pepper to taste

flour in which to roll balls

Method for meatballs

Mix well all ingredients together then roll into small balls and dip in flour.

Fry in olive oil until firm.

Ingredients for tomato sauce

1 Large onion peeled and cut into small pieces then fried in butter until soft and golden.

1 medium carrot finely grated

2 500g. cartons passata

Method for tomato sauce

Blend everything together then cook for approx. 15/20 minutes

Method for meatballs with tomato sauce

Add meatballs to sauce and cook together for a few minutes so that meatballs absorb flavour of sauce.

Serve with plain pasta (tagliatelle or spaghetti) and grated parmesan cheese.

This dish freezes well (freeze in bags of 8 meatballs with adequate sauce).
